Aveyron: Argence, a new tourist tool in Aubrac

This is the name of the hotel-restaurant carried by the municipality of Argences-en-Aubrac for an investment of 3 M€ which will open this summer.

The new commune of Argences-en-Aubrac seems to have finished eating its black bread. After the takeover of its slaughterhouse in the meat division by Beauvallet and the unique intergenerational project in Occitania, now a top-of-the-range hotel-restaurant is preparing to open its doors this summer. This project is supported by the municipality at a cost of €3 million, including €1 million from the Occitanie tourism fund. “The rehabilitation project for a hotel-restaurant in the heart of the Bourg center took on its full meaning when a young couple of recognized restaurateurs took an interest in the site. The project was therefore built with their assistance and a public- formal private”summarizes Jean Valadier, mayor, aware that the opening of this establishment is the keystone to participate in the revival of the commercial attractiveness of the territory. As for Florian Ricard, financing business manager for the Region: “The Occitanie tourism fund offers local authorities a diversification of their sources of financing with engineering dedicated to tourism projects. Supporting the municipality of Argences-en-Aubrac, strongly committed to developing the attractiveness of its territory, is thus natural as this hotel-restaurant project structures and diversifies the local tourist offer.”

Disciple of Bras at the controls

Initially in the hands of Henri-Luc Dauvergne, passed by Maison Bras, meanwhile left under other skies in Figeac, it is finally another disciple of Maison Bras, namely Jonathan Rigoulet who will take the controls of this establishment soberly called “L’Argence” with his companion Candice Knyf, originally from the village. For the latter, mixologist, passed by Paris, London, New York, and recently at the office of Cap Combattut, “Having her own restaurant is a childhood dream and a homecoming, my mother pinches herself every day”she confides with a smile. A culmination also for his companion, Jonathan Rigoulet, aged 37, from Burgundy, passed through many starred hands (Anne-Sophie Pic, Michel Chabran, Hugo Roellinger, etc.) who has just attended Maison Bras for thirteen years. as second in command and in particular in charge of vegetables. It will offer a worker’s menu during the week to meet the clientele and bistronomy evenings and weekends. With his sweetheart’s cocktails, the alchemy is already found. Not to mention the magnificent setting, combining tradition and modernity with wood, copper, terrace, to offer a hundred seats, six bedrooms, two fully equipped attic apartments, gym, and wellness room. In short, paradise on earth. Or as Candice Knyf says “the last stop before space.”

Reservations have already started for this summer. The master of the place has, for cute sin, the fish (but the Aubrac meat will obviously be on the plate!), the vegetables of Natacha and Iwan in Condom-d’Aubrac, the sweet with the classic Paris-Brest, mille-feuilles, lemon tart, and cooked dishes from his childhood such as snails and beef Bourguignon. And we can count on Candice to add her chic and classy grain of salt with her cocktails to want to stay in the heart of the great outdoors, the last stop before eternity.
