Le Beslay, Fabrice Giraud’s gastronomic rendezvous
It is a stone’s throw from Oberkampf that the Chef Fabrice Giraud laid down his pots and his knives. After having cut his teeth in the brigades of Alain Ducasse at the Hotel de Paris in Monaco or at the Shangri-La in China, the Chef then took over the reins of Maison Blanche in Paris. After the establishment closed, Fabrice Giraud took over the management of the Beslay kitchens. Thanks to his highly prestigious background, the Chef unveils a state-of-the-art gourmet cuisineworking the products without artifice and sublimating their tastes wonderfully.
A journey of flavors
Here, the dishes change very regularly, according to the seasons and the inspirations of the Chef. In the preamble, curled up in the velvet of the benches of Beslay, we let ourselves be tempted by the lost bun. Melting and airy, the brioche wonderfully sublimated the flavors of wild mushrooms, enhanced by a divine Young Wine Truffle emulsion. In flat, the curry risotto 1001 nights knew how to make our senses travel with its mango chutney, pumpkin, cauliflower, fried onions & coconut milk.
We were also literally seduced by the Walnut St. Jacques cooked by the Chef. Snacked with Soubressade and accompanied by broccoli, the scallops revealed their beautiful iodized flavors thanks to the Banyuls juice which sublimated them. To finish on a nice sweet note, the fine dark chocolate, hazelnut praline and whipped cream tart was able to satisfy our chocolate cravings. As for desserts, our favorite is undoubtedly the Mango, pineapple and passion fruit cheesecake in textures. A truly Ode to exotic fruits composed by Chef Fabrique Giraud.
At Le Beslay, in addition to the à la carte dishes, food lovers can discover a menu of the day offered every lunchtime. In the evening, in this intimate atmosphere, gourmets can be tempted by a 5-course tasting menu. A great opportunity to discover the amazing combinations imagined by the Chef, always according to his inspirations and the arrivals of the day. Warm atmosphere, fresh and skilfully studied dishes, surprises for the taste buds… The Beslay all good!
